Finca Chambakú is the Restrepo family’s 12-hectare farm located in Manizales (Villamaría), Caldas, and is one of the 17 farms that make up Hacienda el Jardín. The farm runs from 1450 masl to more than 2000 masl.
The farm has state of the art facilities to process natural and semi washed coffees, including a fermentation Lab. and covered sun drying beds with control of temperature.
Juan Felipe Restrepo is a second-generation coffee grower, Q Grader, and partner at the farm. He is the architect of the protocols and processes on the farm. Among the objectives, it is worth highlighting the new protocols for fertilizing with organic matter and extreme post-harvest care. Also, greenhouses with 3-level canopies were built to carry out a better drying process, perfecting the final cup.
